We've moved on from the day after Turkey sandwich! These savory egg rolls are a next-level, delicious way to enjoy your Thanksgiving leftovers later in the season- just save them in the freezer, and when you inevitably get a taste for a delicious turkey dinner, pull them out and quickly reheat in the oven.  

Every bite has a taste of your Thanksgiving plate- a little bit of stuffing, turkey, gravy, collard greens, mac-n-cheese, candied yams…Yum!  

Almost any side dish that you loved on your dinner plate can go into the egg roll. Be creative! Don’t forget to add some gravy, but not too much. You want these to be crispy!  

The real key is not to overload the egg roll, to avoid having it fall apart when you deep fry. Just one or two teaspoons of each ingredient will work. The more variety of ingredients you wish to add, then the smaller each has to be. Also you can roughly chop the ingredients and mix together for the best blended flavor—it all works together for a delicious bite!  

Add your favorite ‘stuffings’ into the egg roll wrapper, then brush the outside of the wrapper with raw beaten egg. Roll up the egg roll, by folding in  from the corners. (If you haven’t made homemade egg rolls before, there are lots of examples on YouTube for proper technique in rolling.)  

The goal is to get them very taut and neat, without being overstuffed or tight. Also, really tuck in the edges nicely so that it doesn’t unravel in the fryer.    

Now just fry them on the stove in hot vegetable oil at 350 degrees for about 8 minutes. You will see the egg roll wrapper turn golden and then it's done!  

Let them cool down, and enjoy with a side of cranberry-orange ginger relish. (Adding some grated ginger to Trader Joe’s cranberry-orange relish works wonderfully!)  

These also work really well as an appetizer to bring to your Friendsgiving potluck! Cut into smaller half bites and arrange on a platter of parsley around the dipping sauce. Your friends will be thankful!  

Saving them for yourself? Store your egg rolls in the freezer for up to four months. Reheat in your air fryer or oven at 350 degrees for about ten minutes, and when your kitchen smells just like Thanksgiving, you’ll know they’re ready to eat!
